Most Sumatra is processed using wet-hulled methods, which is not necessarily ideal, but responsible for the deep, earthy, musty flavors Sumatra is known for. This Sumatra is wet-processed, generally a better method, and provides a much cleaner cup, giving a pretty awesome look at what great Sumatran beans taste like, without the burden of substandard processing. Normally heavily skewed toward the earthy side, this coffee is supremely balanced, with burnt sugar and pecan pie sweetness, punctuated by tangy tamarind, orange peel, and herbal notes.
