One of my suppliers liked this coffee and bought it as a nice natural process Brazil, only to discover after that it's experimentally processed, using anaerobic fermentation. Essentially, the freshly picked cherries are allowed to ferment in closed containers without an exchange of oxygen, controlling the fermentation rate, then naturally dried and processed in a more usual manner. This coffee is malty, with date-like sweetness, baked pastry or pie crust, and blackberry notes.

After months of fantastic limited releases and big Ethiopians, I didn't expect this one to stand out. I was wrong. Brewing with an Aeropress using Sprometheus' recipe this one had so much flavor and body I have been drinking it in the morning in place of my normal Torro latte because only having it in the afternoon wasn't enough!
