Brazil is a massive country, with an equally massive amount of coffee production. Much of it is junk, and even the ones that qualify as 'specialty coffee' tend toward a kind of flat, nutty, chocolatey profile. This coffee is not one of those. It has nuttiness, but on the pecan pie side of things; it has chocolatey notes, but more like a Valrhona 72%, with sweetness and fruity tartness balanced by a mild bittering notes; and it has dark red fruit jammy notes. This coffee has layers, and nuance, the opposite of boring!
