This coffee comes from the Kindeng Mill in Jikawa Province, and is a collaborative effort between the mill and 1500 smallholder growers (not huge commercial farms); the mill collects the cherries, pays well for expertly grown and picked product, then processed and naturally dried on raised beds over a month's time.
Complexity rules the day, with cranberry relish (ahem, Thanksgiving vibes!), Maraschino cherry, dark Valrhona chocolate covered caramel, even maple sugar, and delicate lavender notes. Good for all brew methods!
